Polenta is one of the most known typical course from this region, and among other kinds there is taragna, particularly common in the Alta Valle Brembana. Its name, taragna, seems to come from the word tarèl, the long stick traditionally used to mix polenta. Its peculiar ingredient is cheese, a product typical of the valley, like Bitto and Formai de Mut.
